Head Chef and Associates Chef/Cook

Swiss-Belresort Coronet Peak is a 54-room resort located just seven minutes’ drive from downtown Queenstown. It offers a perfect location to relax and immerse yourself in the beautiful winter and summer playground.
We are currently recruiting for the following positions to lead our kitchen team:
– Head Chef
– Associates Chef/Cook
Major Functions:
Head Chef:
– Directly responsible for all kitchen functions including food purchasing, preparation, and maintenance of quality standards; sanitation and cleanliness; training of employees in cooking, preparation, plate presentation, portion, and food cost control.
– Ensure all food and products are consistently prepared and served according to portioning, cooking/heating, and serving standards.
– Assume 100% responsibility for the quality of products served.
– Stock and maintain sufficient levels of food products at the line station to assure a smooth service period.
– Close the kitchen properly and follow the closing checklist for the kitchen area. Assist others with closing the kitchen.
– Make employment decisions alongside the Operations Manager and General Manager, including interviewing, hiring, evaluating, and monitoring kitchen personnel.
– Ensure all products are ordered according to product specifications and received properly, assuring that deliveries are signed and accounted for.
– Control food cost and usage by following proper requisition of products from storage areas, product storage procedures, standard recipes, and waste control procedures.
– Maintain appropriate cleaning schedules for the kitchen floor, mats, walls, and other equipment and food storage areas.
– Responsible for the financial components of the kitchen, including managing budgets.
– Motivate, inspire, and influence the team in a highly diverse environment.
– Champion the Food Safety Programme to all staff and be committed to creating a Health and Safety culture.
Associates Chef/Cook:
– Assist the Head Chef in the preparation and service of all food items.
– Ensure all food is prepared and presented to the highest standards.
– Maintain a clean and organized work area.
– Assist in the training and development of kitchen staff.
– Follow proper storage and rotation procedures to ensure the highest quality of food.
– Work collaboratively with the kitchen team to meet production goals.
What You Will Bring:
– Full ability to work an array of days and shift times including days, nights, public holidays, and weekends.
– Be a strong team player and fit into a tight-knit team.
– Flexibility, ability, and willingness to work in other departments to meet business needs.
– Prior experience in a similar hotel-based role is desirable.
– Strong communication skills and the ability to communicate with guests when required.
– Strong leadership skills to train and develop others as needed.
