Senior Chef

Job Description/Overview:  

Wild Estate, located on the beautiful Waiheke Island, is seeking a talented Sous Chef/Senior Chef to join their team. The estate is a unique venue where guests can relax among the vines while enjoying high-quality food, world-class wines, and craft beers. This role offers mostly daytime trading hours, ensuring a great work-life balance in an exceptional location.

 

Key Responsibilities:

 

– Oversee the operation and organisation of a designated part of the kitchen.

– Assist the Head Chef with menu planning as required.

– Ensure consistency, quality, and cost control by strictly adhering to recipes and proportions.

– Train and mentor kitchen staff to maintain high standards.

– Manage staff rosters in collaboration with the Head Chef.

– Spot check dishes for quality, presentation, and temperature as they leave the kitchen.

– Follow established policies to maintain food safety and health & safety standards in all food preparation areas.

– Ensure that all equipment and work environments are operational.

– Report any hazards that may affect work conditions to the designated management.

– Order and maintain inventory to ensure efficient kitchen operations.

– Foster communication and support among staff.

– Uphold high morale in the kitchen.

– Maintain a strong relationship between kitchen and front-of-house staff.

– Lead kitchen meetings in conjunction with the Head Chef.

– Perform any additional duties as required by the Head Chef.

 

Preferred Competencies:

 

– New Zealand Certificate (Level 4) in Cookery or equivalent.

– Minimum of 2 years of experience managing a kitchen.

– Completion of a food safety course within the past three years.

– Strong training skills.

– Proficiency in Microsoft Office and restaurant management software.

– Budgeting and menu costing skills.

– Organisational and time management skills.

– Knowledge of wine and food pairing.

 

Experience:  

– A minimum of 2 years of experience as a Sous Chef or in a senior culinary role.

 

Skills:

 

– Strong leadership and communication skills.

– Ability to maintain high standards of food quality and safety.

– Proficiency in managing kitchen operations and staff.
