Requirements:
– At least three years of relevant experience in a multicuisine establishment
– Specialization in continental and Indian cuisine is a must
– Eligibility to work in New Zealand
Key Responsibilities:
– Plan and organize the preparation and cooking of multicuisine food for each service session
– Plan and design seasonal and special event menus
– Estimate food and labor costs, order food supplies, and research alternate supply sources
– Monitor and maintain quality of dishes at all stages of preparation and presentation
– Discuss food preparation issues with managers, dietitians, and kitchen and waiting staff
– Use different techniques and cooking procedures for preparing dishes and advise/train other kitchen staff
– Prepare and cook food using ovens, hotplates, grills, and similar equipment
– Prepare food to meet special dietary requirements
– Explain and enforce hygiene regulations
– Select and train staff, including Occupational Safety and Health (OSH)
– Implement Food Control Plan
– Check cleanliness and operation of equipment and premises to ensure compliance with occupational health and safety regulations
– Prepare meat for sale and bake bread, cakes, and pastries
– Portion food, plate dishes, and add appropriate gravies, sauces, and garnishes
Work Conditions:
– Split shifts
– Multiple shifts including early morning, day, night, and graveyard shifts
– Filler shifts for cooks/chefs and during annual leave periods
– High volume production environment
– Multi-dish cooking simultaneously
– Full training and on-the-job mentoring for new menu items
– Adaptability to frequent menu changes
– Different preparation/variations of the same item in different food service periods
